Salmiak (ammonium chloride) gives liquorice its distinctive salty, slightly mineral depth — a bold flavour profile that’s hugely popular in the Netherlands and Nordic countries. In the UK, however, this style of liquorice is considered strong and very much an acquired taste.

What is Salmiak (salmiac), a traditional Swedish or Scandinavian liquorice made using ammonium chloride. This gives a distinctive salty, tangy taste that can feel quite strong or nasal to those who aren’t used to it. While it is not ammonia, it can create an ammonia-like sensation in the nose for some people. It’s very much an acquired taste here in the UK, but it is hugely popular across Europe, where it’s generally considered a standard liquorice
