Salmiak (ammonium chloride) gives liquorice its distinctive salty, mineral-like flavour — bold, savoury and unmistakably strong. It’s a firm favourite across the Netherlands and Nordic countries, where salty liquorice is part of everyday snacking culture. In the UK, however, this is considered a much more acquired taste. Salmiak (salmiac) is a traditional Scandinavian liquorice flavour made using ammonium chloride, giving a Salmiak distinctive salty, tangy taste that can feel strong or nasal to those not used to it. It is made with ammonium chloride, a salt with a sharp, salty, slightly bitter taste. It is not ammonia, although it can create an ammonia-like sensation in the nose for some people.
